"Souffle Bibingka"


During our first week in Manila, we were in search of C2 Classic Cuisine's "Crispy Pata Kare-Kare" (deep fried pig trotters and knuckles) lathered with savory peanut butter. This is a restaurant that proudly boasts its "'redefined" take on Filipino cuisine. One of them is this so-called "Bibingka Souffle," apparently an award-winning dessert described to be a "light and fluffy blend of coconut custard , salted egg, quezo de bola (a type of Spanish cheese), and toasted coconut." This was our first introduction to "bibingka," which many will claim is "fancy" bibingka. They are whipped to order by two very hard working chefs who proudly display their hand whipping prowess. C2 Classic Cuisine is supposed to be affiliated with the Center for Culinary Arts in Manila and I knew of it when I was last in Manila. While it definitely looked like souffle, tasted like the traditional bibingka, it was definitely not memorable.
